The story
At Fine Gueule in Nice, the cooking is driven by the seasons and the market. The kitchen team, led by chef Géraud alongside manager Kim, draws on produce from local markets to build a menu that changes with what’s best. The pair met during a career change at the Institut Paul Bocuse in Lyon, and their shared passion is clear: Kim runs the dining room with warmth, while Géraud brings the same care to every plate.
The menu features dishes rooted in the region. A classic Niçoise pissaladière – a savoury tart of caramelised onions, olives and anchovies, dating back to 15th-century Genoa – is a fixture. Other starters include a bio egg mimosa with tarragon and sucrine heart, and a daurade ceviche with pickles, grapefruit and hazelnuts. The kitchen works with vegetables from the market, and the wine list is carefully chosen to match.
The atmosphere is relaxed and elegant, more like a refined brasserie than a stiff fine-dining room. Guests can sit outside on the terrace or inside, where the service is attentive without being fussy. Diners describe the food as “quality cuisine, refined” and praise the “good value for money” and originality of flavours and presentation.
Fine Gueule’s recognition by the Michelin guide as a Recommended restaurant reflects the consistency and care in both the cooking and the experience. It’s a place where the food and the setting are treated with the same thoughtfulness, making it a reliable choice for lunch or dinner in Nice.
