The story

La Mère Germaine, Nice – A Seafood Institution on the Villefranche-sur-Mer Waterfront Since 1938

An Iconic Address on the Villefranche-sur-Mer Waterfront

Since 1938, La Mère Germaine has anchored itself on the quays of Villefranche-sur-Mer, a restaurant that feels both like a timeless escape and a living piece of Côte d’Azur history. The setting is immediate and striking: tables set just metres from the water, overlooking what is often called Europe’s most beautiful bay, where fishing boats bob beside superyachts. The atmosphere is one of relaxed elegance—a place where the sea breeze and the sound of lapping waves are part of the meal.

A Story of Passion, the Sea, and the Sixth Fleet

The restaurant’s soul comes from its founder, Germaine Brau. Arriving in Villefranche in 1925, she opened her first small restaurant on Rue de l’Église before moving to the Quai Courbet waterfront in 1938. Her cooking was simple yet generous, and her warmth became legendary. During the post-war years, Germaine became "Mom Germaine" to the American Sixth Fleet, welcoming sailors as if they were her own sons. Her reputation grew so wide that the U.S. Navy made a film about her. The restaurant remains a family affair: today, third-generation Thierry Blouin carries the legacy forward, honouring the past while adapting the house to modern expectations.

Refined Mediterranean Seafood

The kitchen focuses on the best of the Mediterranean, letting the sea and the seasons guide the menu. The chef works with noble fish, sun-ripened vegetables, and local produce, with a particular reverence for shellfish. Live lobsters and langoustes are presented from the restaurant’s own viviers, prepared simply or flambéed with garlic and Provençal herbs. The seafood menu also features platters of clams prepared in classic styles—marinière, poulette, or arabiatta—and oysters from Maison Gillardeau. The wine list is deep, with a strong selection from Provence, Burgundy, and Bordeaux, plus local Bellet wines.

La Mère Germaine’s status as a Michelin Recommended restaurant reflects the consistency and quality of this cooking—a refined yet unpretentious expression of the coast, served in a dining room or on the sunny terrace that feels like the best table in the port.
