Arnaud Collin opened this address after falling in love with the region – and his menu, which changes each week, is built around what the markets offer that day. Born near Paris, Collin learned his trade alongside some of France’s most exacting chefs – Le Squer, Piège, Durichon, Ravin – before heading south. His cooking is “sincere, authentic and generous,” a direct reflection of the produce and the seasons. At the stove and in the dining room, the team he leads (guests are welcomed by sommelier Romain) ensures the experience is as warm as it is polished.
