The story
Le Dix Vins occupies a central spot in Carouge, Geneva, delivering bistro cuisine anchored in local terroir and seasonal rhythms. Kevin Veronese took the helm in September 2023, inheriting the venue from René Fracheboud, who cultivated its loyal following for nearly three decades. Kevin works alongside his wife Morgane, who oversees the wine service. He maintains the house's soul while applying a precise, generous touch. His philosophy rejects unnecessary effects, focusing instead on fresh ingredients and the Genève Région – Terre Avenir label. Kevin sums up his approach simply, noting he has never sought great tables, only good ones.
The kitchen showcases dishes like carpaccio with red prawns, avocado, mango, and onion pickles, alongside tartare made from local saladine beef paired with waffle fries. Desserts feature a mille-feuille layered with strawberry and vanilla mascarpone cream. Critics highlight the reliability of classic preparations, pointing to a standout Richelieu pâté and grilled turbot fillets executed with care. The menu also offers a substantial ray wing in Grenoble sauce accompanied by crunchy vegetables, finished with a baba au rhum where Saint-James rum is poured generously at the table. This bistro cooking relies on solid technique and respect for the product.
The dining area displays nostalgic charm through walls lined with tin advertising signs and a lively table reserved for regulars. Morgane Veronese, trained at the Changins oenology school, builds the wine list with an eye for excellence and dialogue with the food. Selections range from prestigious Burgundies and top Bordeaux to hidden Swiss gems. A Coravin system allows the team to serve Grand Crus by the glass without opening the bottle, ensuring a rotating selection each week. The setting feels authentic and unpretentious, mirroring the couple's dedication to sincere hospitality.
