The story
In the antiques district overlooking Port Lympia and facing Mont Boron, Rouge brings together a restaurant, wine bar, and joyful atmosphere. The space welcomes guests along a striking counter, at tables, or on a terrace set against the old fortress of the Château.
The kitchen works with fresh, seasonal ingredients to create dishes that are neither tapas nor amuse-bouches, but full cooked plates served hot or cold in mini-portions for one or to share. This modern cuisine approach keeps the menu light and convivial, letting diners explore several flavors in a single meal.
The wine program is equally central. A large refrigerated, glass-fronted cabinet holds several hundred carefully selected bottles, almost exclusively from independent growers who work with respect for nature—biodynamic and natural wines are the focus. Guests can choose a bottle or order by the glass, with the option to taste before buying.
Rouge has earned a Michelin recommendation, a recognition that matches the precision of its cooking and the warmth of its service. The atmosphere is festive and open, suited for an aperitif with friends or a full dinner.
