The story
At La Fourchette des Ducs in Obernai, the focus is on sublimating flavours. Chef Nicolas Stamm-Corby works to "prolong the enchantment of the moment" and leave a lasting memory through his modern Alsatian cuisine. The result is a Michelin Two Star experience that feels both refined and natural.
The restaurant occupies a building born from the vision of Ettore Bugatti. He encouraged friends Lucien Weissenburger, Charles Spindler and René Lalique to create the Clos Sainte Odile. Today, the Winter Salon is listed as a historic monument, featuring Lalique, Spindler and Bugatti pieces. In the Summer Salon, Baccarat crystals by Arik Lévy, works by Jaime Hayon and an Aubusson tapestry by Marc Petit meet a vast terrace for aperitifs. Each room tells its own story.
Nicolas Stamm-Corby and Serge Schaal have worked together since 1998. Together, they have redefined certain codes of gastronomy within their houses. The kitchen’s modern cuisine — technically virtuosic yet grounded in Alsatian roots — has earned the restaurant the Michelin Passion Dessert award since 2019, naming it one of the best patisseries in France. In 2024, the dining room received the Michelin Service Award for best service in France.
The restaurant’s philosophy is built on benevolence, sweetness and simple gourmet pleasures, "without excess. Delicately." It invites guests to rare, generous memories — an experience that goes beyond the plate and into the very fabric of Alsace’s cultural heritage.
