A Bistronomie at the Heart of the Alpilles

At Allegria !, the kitchen celebrates the abundant land of Provence with honesty and creativity. Located within the Hameau des Baux in Paradou, this bistronomie restaurant has earned a Michelin Recommended distinction for its sincere, seasonal cooking. The menu changes with the seasons, drawing from organic market gardeners in Saint-Rémy-de-Provence, Camargue fishermen, Alpilles livestock breeders, and producers from the Vallée des Baux. Every plate tells the story of a territory – vegetables, olive oil, herbs, Mediterranean fish, and carefully selected meats form the backbone of a cuisine that is both rooted and inventive.

Chef Julie Chaix – A Provençal Return

Behind the stove is Chef Julie Chaix, a Provençal native who honed her craft in some of France’s most exacting kitchens. She began her culinary apprenticeship at Maison PIC, then refined her skill and palate alongside mentor Alain Ducasse at Le Louis XV, Le Grill, and La Bastide de Moustiers. A stint at Bistrot Benoit in New York added a global perspective. But the call of the cicadas proved irresistible, and Chaix returned to her home region to take command of the kitchens at Hameau des Baux. At Allegria !, she channels that wealth of experience into a Provencal cuisine that is refined yet approachable.

The Daily Rhythm – From Breakfast to Dinner

The restaurant is open daily for lunch and dinner, with a generous breakfast buffet (8:00–10:30) that features fresh fruits, artisan breads, viennoiseries, homemade granola, Provençal honey, regional cheeses, and charcuterie. From early April through late May, Allegria ! also hosts a Sunday brunch – a convivial spread of savory and sweet dishes, wood-fire cooked plates, and revisited Provençal recipes, priced at 59 € per adult and 25 € for children under 12.

The bar, open from noon to 11 PM, takes a sun-drenched approach to mixology: classic cocktails reimagined with citrus, aromatic herbs, flowers, and regional liqueurs. A snacking menu is available from 12:30 to 6 PM, and the Spritz Bar happy hour runs from 6 to 7 PM.
