The story
At Le Gantxo, chef Laurent Miremont and Isabelle Miremont practice a "cuisine à quatre mains" — a kitchen driven by passion and generosity. Their creative, contemporary cuisine is rooted in the flavours of the Pays Basque and the nearby Adour river. "Going out to meet local producers and talking with them about their daily lives, their passion for their products, their craft, with total simplicity," says Laurent. "That is the origin of my cuisine, entirely focused on the product."
This commitment to the product, seasonality, and local encounters shapes the restaurant's tasting menus and daily carte. Located in the quiet port village of Guiche, just twenty minutes from Bayonne, Le Gantxo has earned a Michelin Bib Gourmand for its good quality, good value cooking — a recognition of the sincerity of this engaged, modern cuisine.
The restaurant's contemporary spirit extends to its setting, which welcomes guests for both lunch and dinner, and offers outdoor seating in fine weather. A wheelchair-accessible space with air conditioning and private parking, it is also a convenient stop for those arriving by boat on the Adour, with free mooring and a pontoon just five minutes away. Le Gantxo is more than a meal; it is an invitation to eat with the seasons, guided by the product and the people who grow it.
