Tradition and Terroir

At L'Auberge du Pas de Vent in Pouillon, the spirit of the Landes countryside is alive in every dish. Chef Aurélien Belocq, a child of the region, returned to his roots after a dozen years cooking in other houses. His mission: to keep this atypical auberge thriving with “pleasure and gourmandise” as guiding principles. The Michelin Bib Gourmand, held since 2005, recognises the honest, good-value cooking that defines the place.

The kitchen works with real local produce, from the producer to the plate. Expect generous, traditional fare: a steak de thon just snacké with herbed taboulé, paupiettes de feuilles de chou vert aux pieds de cochon, gras-doubles à la crémaillère, or ris de veau in sauce served in aged copper pans. There are no clichés here – no chèvre chaud or molten chocolate cake. Instead, the menu honours the region’s rustic soul.

A Living History

The building has stood since 1885, first as a drinking den and épicerie, then an inn, and finally a restaurant. The name “Pas de Vent” evolved from the Gascon “padeben,” a nod to the pastures that once surrounded it. Inside, the quillet – a traditional game of ninepins played on a clay floor in the back room – remains at the heart of the place. Wood crackles in the fireplace, tables are dressed with cloth napkins, and the uneven floors and creaking beams tell stories of the generations who have gathered here.

The auberge has welcomed everyone: farmers in blue work clothes, elegant diners, children, and locals speaking patois. Chef Belocq and his team respect this legacy, valuing warmth, smiles, and transmission as much as the cooking itself. It’s not a trendy spot – the decor is unfussy, the furniture solid and old. But that is precisely the point.

The Landes cuisine at L’Auberge du Pas de Vent is sincere and generous, served in sharing pans. The weekday lunch menu (16€) offers a starter, main, and dessert – a testament to the Bib Gourmand’s promise of quality at a fair price. Whether you come for the midday meal or the evening service, you step into a place that has been feeding people well for over a century. As the chef says, “It is not much more than a good moment and delicious memories – and today that is already quite something.”
