Le Café de la Fontaine is the second restaurant of Le Phébus & Spa, a five-star Relais & Châteaux property set in a historic stone mas between Gordes and Roussillon. While its sibling, La Table de Xavier Mathieu, holds a Michelin star, this bistrot offers a more casual way to experience the same Provencal generosity.
Chef-proprietor Xavier Mathieu, a native of the Luberon, draws on five generations of family roots. At Le Café de la Fontaine, he translates his passion for the region’s terroir into accessible, sun-drenched dishes. The kitchen works with local produce, herbs from the garrigue, and the aromatic flavours that define Mediterranean cooking. The result is an interpretation of classic Provencal recipes that feels both honest and refined.
The restaurant occupies a light-filled space within the mas, with outdoor seating that looks out over the valley and the ochre cliffs of Roussillon.
