The story
In the quiet village of Sargé-sur-Braye, just a short drive from Saint-Calais, Osma brings a thoughtful, modern cuisine to the Loir-et-Cher countryside. Run by chef Valentin Barbera, the restaurant is built on a clear philosophy: gastronomy and sustainability are not opposites. “Engaging in a gastronomic adventure is a responsibility,” the team writes, and that conviction runs through every detail of the experience.
The cooking is inventive, grounded in seasonal and local produce. Osma’s approach to Modern Cuisine is one of respect for the whole living world. Trimmings and bones nourish broths and juices; waste is minimised, and what remains goes back to the village chicken coops. It is a closed loop, quietly virtuous.
The restaurant’s own kitchen garden supplies much of what arrives on the plate. A vegetable basket, available for collection, offers a glimpse of the garden’s bounty: seasonal vegetables, aromatic herbs, and edible flowers. The wine list is interesting and carefully chosen, with a natural, biodynamic sensibility that mirrors the kitchen’s ethos.
Osma’s commitment has not gone unnoticed. The restaurant is recommended by the Michelin guide, a recognition that speaks to the precision and integrity of Barbera’s work. The dining room is open for lunch Wednesday through Sunday, and for dinner Thursday through Sunday, with outdoor seating available in warmer months.
For those travelling from further afield, the restaurant is a 15-minute drive from the TGV station at Vendôme Villiers-sur-Loir, and roughly 40 minutes from the Circuit de la Sarthe in Le Mans. It is a destination worth the journey.
