Corico in Sarlat-la-Canéda Celebrates Rural Dordogne Cooking

The farm and the kitchen team

Corico in Sarlat-la-Canéda grounds its Dordogne cuisine in a revived family estate managed by Jérémy Peyrot. Kintoa and Mangalitza pigs share grazing land with chickens, vegetable beds, and fruit trees. Chefs Cécile Garin and Lou Desplats run the daily kitchen, drawing ingredients directly from this closed-loop operation. Their hyper-local model earned recognition on the 2026 Le Fooding list for aligning agriculture with dining.

Seasonal plates and local ingredients

The menu follows the exact harvest calendar rather than a fixed schedule. A vibrant haricots verts salad arrives dressed in a sharp Picon vinaigrette, layered with soft roasted apricots, delicate smoked mackerel, fresh ricotta, and snipped chives. River trout from Borrèze rests in a light sorrel cream alongside ultra-fresh garden peas and fish roe. Sweet finishes feature a dense peanut butter cookie paired with vanilla ice cream, salted caramel, and crunchy peanut praline.

The dining space and resident guests

Patrons gather inside a repurposed agricultural hangar that maintains a distinctly rustic character. Rough wooden tables share floor space with stacked hay bales and mismatched vintage chairs beneath open rafters. The venue doubles as a creative workshop for visiting culinarians who rotate through short-term residencies. Local producers and traveling chefs alike contribute their perspectives to the same shared pantry.

Co(co)rico! Jérémy Peyrot has breathed new life into his family’s farm that had been languishing in the heart of the Dordogne department, turning it into a lovely eco-friendly hive of activity where you’ll find Kintoa and Mangalitza pigs, chickens, a vegetable patch and an orchard all existing in harmony. All of which he uses to supply the pantry and kitchen – with help from neighboring farms (that of Adrien Constant and Les Jardins de Malevergne) – of chefs Cécile Garin (ex-Pottoka in Paris) and Lou Desplats (ex-Py-r in Toulouse), who regularly host chefs from the area and further away for culinary residencies. The day we went for lunch, seated in the open-air hangar that was equipped with mismatched furniture and hay bale seating, they sent out: a vibrant haricots verts salad in Picon vinaigrette (a reduction of the aforementioned liqueur and mackerel), topped with roasted apricots, smoked mackerel, ricotta and chives; impeccable Borrèze trout bathed in sorrel cream, with ultra-fresh peas and trout roe; before a delicious peanut butter cookie paired with vanilla ice cream, salted caramel sauce and peanut praline. // Loulou Pic
