The story
The current chapter began in 2016, when their son Guillaume returned after several years training in some of France's finest houses. His arrival gave the house new momentum, and today the kitchen expresses a cuisine that is both modern and firmly anchored in the local terroir. The team, led by Guillaume, serves a style of Modern Cuisine that respects seasonality and provenance—green asparagus, suckling lamb, wild garlic and wild shoots appear as the seasons turn, alongside first-of-the-season strawberries.
Michelin has recommended Au Vieux Moulin, a recognition that reflects the consistency and ambition of the kitchen, as well as the warmth of the setting. The inn also offers rooms, making it a natural stop for those exploring the Northern Vosges. With an interesting wine list, outdoor seating and wheelchair access, the restaurant caters to both casual dinners and private parties.
