The story
In Tain-l'Hermitage, just a stone's throw from Tournon-sur-Rhône, Clément and Laurène Mathé have opened La Cage aux Fleurs, a restaurant that brings together global experience and deep roots in the region. After working in various establishments around the world, the couple returned home to create their first restaurant. The result is a refined, seasonal modern cuisine built on local products and the bounty of the Rhône Valley.
The restaurant’s interior, designed by architect Julie Mathé, is deliberately "chic" and botanical, with a relaxed, welcoming feel. The name—"The Flower Cage"—matches the décor: a colorful bistro where the atmosphere is as carefully curated as the food. The charcoal-grilled dishes, truffles in season, and produce from nearby farms define the cooking style.
The menu reflects the seasons and the terroir. Starters like marbled duck foie gras terrine with wine lees and smoked eels, or a tataki of thonine with roasted yellow tomato coulis and Nyons olives, set the tone. Mains include braised pork shoulder cooked for ten hours, served with carrot-cumin espuma and pita bread, and grilled pink trout with a courgette-miso coulis. For sharing, there’s Limousin prime rib and grilled octopus. Desserts lean local and seasonal—Ardèche faisselle with jam, or Amaretto cherry with creamy Makaé chocolate and morello cherry sorbet.
