The story
In the heart of the Cantal, within the Parc Naturel Régional des Volcans d'Auvergne, L'Auberge des Montagnes sits in the small village of Pailherols, 34 km from Aurillac. The building is a former family house, now a hotel with a gastronomic restaurant, a salon-bar with a fireplace, a terrace, two pools, and a spa. The atmosphere is authentic and warm – a place where the mountains set the pace.
Five generations of the Combourieu family have shaped this house. Today, sisters Marie and Coralie, along with their husbands Vincent and Stéphane, carry on the tradition of hospitality that began here. Their passion for the region and its products is evident in every detail, from the welcoming rooms to the plates that leave the kitchen.
The restaurant at L'Auberge des Montagnes is what earned it a Michelin Bib Gourmand – recognition for good quality, good value cooking. The kitchen draws on the rich larder of the Cantal: local cheeses, meats from the Aubrac, and vegetables from nearby farms.
