The story
In the small Bavarian town of Aldersbach, a former monastery has been transformed into a destination for thoughtful, modern cooking. At das asam, Anna and Josef Kapser welcome guests to a setting that balances centuries-old stone walls with clean, contemporary design. Their work has been recognized with a Michelin Bib Gourmand, an award for good quality at a reasonable price – a fitting nod to the approachable yet refined experience they offer.
Josef Kapser, the calm presence in the kitchen, trained in Michelin-starred kitchens – the Ketschauer Hof and under Denis Feix – before returning to his native Lower Bavaria. Anna Kapser, who describes herself as “the fiery one,” also trained under Feix and worked at Munich’s Les Deux. Together, they opened das asam in 2018, bringing their collective experience to this historic site.
The restaurant occupies the Modlersäle, once the dining hall of the abbots, with high ceilings and a sense of occasion. During the day, the Klosterschänke offers a more casual spot for lunch or coffee. When weather permits, the terrace and the Kreuzgarten – a cloister garden where time seems to stand still – provide an idyllic backdrop for a leisurely meal.
The menu changes with the seasons, roughly every six weeks, to make the most of local produce. Dishes might include cured fjord trout with cucumber and dill vinaigrette, or a duo of veal with sous-vide boiled beef and veal ravioli, accompanied by white asparagus and wild garlic jus. The cooking is modern in inspiration but grounded in classic technique. The kitchen’s commitment to seasonal ingredients aligns with a farm-to-table philosophy, evident in the bright, vegetable-forward compositions.
The Bib Gourmand recognition underscores the value here: the four-course wine dinner, for instance, is priced at €119, and the Easter menu at €55 for four courses – a testament to the Kapsers’ belief that excellent cooking should remain accessible.
