He sources cattle directly from German producers like True Wilderness and Vinzenzmurr, then rotates grass fed animals from Ireland and Spain through the kitchen. The meat hangs in temperature controlled chambers where it loses moisture over several weeks, developing a denser texture and pronounced nutty aroma.

Signature Cuts and Seasonal Plates

The grill station in this steak kitchen prioritizes straightforward preparations that let the marbling speak for itself. Regular visitors order the rinderfilet dressed with port wine jus or split a chateaubriand alongside green peppercorn sauce, fries, and crisp salad. The rotating menu also highlights a roasted cauliflower steak served with red bean cream, confit tomatoes, and chimichurri for those avoiding meat.
