Anker’s cooking is built on a foundation of refreshing acidity and rare herbs. He works with more than thirty different vinegars and citrus fruits like Buddha’s Hand, Kafir Limes, and Finger Limes. Each dish is a response to what is available at the moment. When a product runs out, the dish changes – no fuss, no waiting. This flexibility is part of the restaurant’s identity, and it keeps the menu in constant, lively evolution.

The team uses every part of an ingredient. What cannot be used immediately is preserved, fermented, or pickled, often turning into homemade liquors or unexpected garnishes. This approach is not a gimmick – it is the everyday reality of the kitchen.

BRIKZ offers a five to seven-course menu, available with fish and meat, vegetarian, or vegan options. There is also a small à la carte selection. The kitchen is happy to accommodate individual preferences – meat lovers can dine with vegetarians, and fish allergies are no problem, as long as they are mentioned in advance.

The Chef’s Connection to the Region

Arne Anker, a native of northern Germany, is a regular at Markthalle 9 on Fridays. He meets with herb farmers, butchers, and other producers, always learning and bringing back new products. These conversations fuel his drive to keep developing. For him, standing still is a step backwards.

Concept Thrilling fine dining in Arne Anker's relaxed restaurant at Savigny Square. Ten rotating dishes, offered as a personalized menu starting from five courses or à la carte. Culinary Style Anker's delicate creations stay even closer to the raw ingredients, and he weaves in childhood memories. Take the "primal carrot," for instance: he presents it as an artfully crafted carrot made from cherry gel, carrot purée, tarragon cream, and carrot greens, while pine cone cream and fir shoots provide additional nutty, earthy notes. Sunday dinners at Grandma's inspired Anker's Wagyu beef roulade, sliced paper-thin and stuffed with celery, shiso, bacon, and mustard, served alongside an aromatic veal jus infused with cocoa and coffee. Wine Sommelier Julius Lemp curates a wine list featuring classics such as Meyer-Näkel and Dreissigacker, selections from Odinstal in the Palatinate, and Roberto Picèch from Friuli. Ambiance Elegant yet casual and familial; tables set in crisp white linen against exposed red brick walls. The two window tables offer the finest seating.
