The story
The name GOLVET is Swedish for “the ground,” yet this Berlin restaurant sits 32 meters above the city, on the eighth floor at Potsdamer Platz. The contradiction is deliberate: a place grounded in ambition, lifted by experience. From this height, the view sweeps across the Staatsbibliothek to the Tiergarten, taking in the Reichstag dome, the Philharmonie, and the Sony Center. The interior is kept deliberately dark and minimal, sharpening the focus on the panorama outside and the food on the plate.
Chef Nicholas Hahn, named Berlin Master Chef 2025, brings a modern, uncompromising approach to the kitchen. His cooking is described as reduced to the essential, radical in flavour, and precise in craft. Product quality is the starting point; fermentation adds depth; aromas remain clear. There are no effects, only substance. Guests can book the chef’s table for a direct view into the open kitchen, watching the dishes being composed with passion and precision. Sous Chef Jana Biondić, whose background in art history informs her aesthetic, works alongside Hahn to shape the culinary identity.
Bar Manager Thomas Isabella draws on traditional Japanese fermentation techniques—miso, shoyu, and lacto-fermentation—to create cocktails with unusual depth and umami. Signature drinks include the “Inverted Root” with beetroot and spruce, and the “Seoul Tropique” with pineapple rum and kimchi. The bar menu also lists an extensive selection of gins, whiskies, and other spirits.
Nine street artists have left their mark on the restaurant, their works meeting the precise cuisine and clean lines of the interior. The interplay of raw urban art and refined fine dining is no accident: both live in the moment, both are transient. It is this dynamic that gives GOLVET its particular energy, making it a space for culinary craft, contemporary art, and a distinctly Berlin experience. The Michelin star awarded for high-quality cooking confirms the ambition at work.
