The story
Ruud Willemsen leads the kitchen at Restaurant Nova, situated within the historic Hotel Bellevue that traces its roots to a building constructed by the Rigett von Capol family in 1577. Together with host Marianne Tobler, he presents a menu defined by fresh, innovative, and contemporary cuisine that balances classic techniques with Mediterranean influences. During the winter season, the fine dining concept earns recognition through its 16 Gault&Millau points, while summer brings a focus on Spanish tapas and al fresco dining on the sunny terrace.
The tasting menu highlights inventive arrangements such as the Randen-Trilogie, which combines salad, mousse, and confit slices alongside leaf salad foam and a sweet macaron. Seafood selections feature gently cooked turbot fillet stuffed with lobster mousse and topped with smoked eel, served with a beurre blanc sauce enriched by crevettes and Bündner Rohess speck. Another centerpiece pairs Wagyu entrecôte and flank steak with corn and braised celery, offering a robust counterpoint to lighter elements like scallops cut into delicate leaves and presented over foamed cauliflower velouté.
Located at 1,081 meters above sea level, the hotel occupies a central and sunny position in Flims Dorf, providing guests with views of the surrounding mountain range. The interior offers 30 individually furnished rooms designed for rest, complementing the culinary focus of the space. Guests can dine outdoors on the terrace during warmer months, taking advantage of the direct access to the Bergbahnen lifts just 200 meters away.
