The story
In March 2016, Daniela and Udo Knörlein opened their own restaurant on Bleibtreustraße in Berlin’s Charlottenburg. They call it a “kulinarisches Wohnzimmer” – a culinary living room. The idea is straightforward: innovative modern French cuisine in a relaxed, welcoming atmosphere. On top of that, the restaurant houses a private collection of over 1,000 cookbooks, stacked on shelves and windowsills, available for guests to browse. This is the Kitchen Library, and it has earned a Michelin Recommended award for its singular approach.
Chef Udo Knörlein brings a deep background in French technique from stints in Tonbach, Stuttgart, Mels, Basel, and Zürich. But his cooking is not classical. It’s product-driven, with a commitment to regional and seasonal ingredients, and a constant curiosity for new flavors. He works alone in the kitchen, making everything from sourdough bread and brioche to fermented vegetables and multi-day jus. His style is artisan – rooted in French craft but open to global influences, with a strong nod to his Franconian roots. The result is modern French cuisine that feels personal and surprising.
A signature of Udo’s cooking is his pickles. Inspired by his grandmother and refined with techniques from Noma, he pickles vegetables to preserve them across seasons, adding a characteristic sourness and depth. Pickles appear in every menu, and for the restaurant’s fifth anniversary, he created a signature pickle that remains a fixture. Alongside the food, Daniela Knörlein, an aspiring sommelier, pairs the dishes with wines from small, often unknown producers in Germany, Eastern Europe, and her native Switzerland.
The space is divided into two parts: the Kitchen, where the cooking happens, and the Library, where the books live. Daniela tends to the collection, sorting new arrivals and keeping the old volumes orderly. For guests, it’s a place to linger, read, and eat. The Michelin Recommended award recognizes the sincerity of this concept – a restaurant that feels like a home, serving modern French cuisine that is both precise and unpretentious.
