GUI, in the heart of Bielefeld’s Altstadt, earned a Michelin Recommended nod in 2026 – a fitting recognition for a restaurant that has quietly refined its identity over nearly two decades. What began in 2006 as a Mediterranean wine bistro has grown into a place where every detail, from plate to service, carries intention.
The name GUI means “enjoy” in Esperanto, and that philosophy runs through everything. The kitchen, led by chef Marita Rempel, follows no trend but a clear stance: “Feinheit statt Überfluss, Klarheit statt Komplexität” – finesse over excess, clarity over complexity. Her cooking is described as quiet, precise, and profound. She works with Mediterranean aromas, modern impulses, and regional ingredients, creating dishes that feel light yet linger.
The team is small and deeply rooted. Co-owners Georgeos Karras (formerly head chef) and Dragoljub Nikolić (host) have shaped GUI for years. Together with Rempel, they run the house with experience and warmth – a continuity that guests feel the moment they walk in.

The menu changes regularly, but the structure offers flexibility. A four-course menu (€95) or a seven-course journey (€140) both begin with bread, herb butter, and a greeting from the kitchen. Dishes might include a Tataki of tuna with Japanese broth, edamame, wasabi oil, and leek mayonnaise; a goat cheese mille-feuille with pea salad, frisée, mint, and passion fruit; or sturgeon fillet with bean cream, caramelized onions, egg yolk cream, and smoked eel sauce. Meat courses feature free-range chicken or US Prime roast beef with savoy cabbage and Périgord truffle. Dessert is a cheesecake with rhubarb, raspberries, and citrus.
A vegetarian four-course option (€80) is also available, with dishes like pak choi with pineapple and Asian aromas, or pasta with fresh morels, lovage, and Gruyère. A lunch menu (three courses, €45) offers a lighter introduction.
The wine list is carefully curated, with an emphasis on German and French whites, Champagne, and Greek selections. A “wine journey” (€10 per glass) pairs with the menu.
