The restaurant’s modern, relaxed atmosphere sets the stage for a kitchen that is both playful and precise. Michelin has recognized this approach with a Recommended award, affirming the restaurant’s commitment to quality.
At the helm is multiple-award-winning chef Björn Bitzer, who, together with his team, creates dishes that appeal to all the senses. Bitzer’s philosophy is rooted in a high standard of product quality and a consistent “zero-waste” approach. “The symbiosis of taste, texture, and presentation creates the perfect moment of enjoyment,” he says. This ethos translates into a menu that is both seasonally driven and creatively daring.
The current evening menu, refreshed for the start of 2026, is described as “refreshing and full of aromatic variety.” It begins with a “Prolog”—a series of small bites such as Label Rouge salmon with leek, mustard seed, and fennel; cauliflower with white chocolate, beetroot, and peanut; and Parmesan with anchovy, tomato, and caper.
Guests then choose from a la carte options or one of the curated menus. The four-course menu (€89) takes diners through curry–cauliflower cream, suckling pig cheek, veal fillet, and a chocolate–sea buckthorn finale. The six-course version (€119) adds quail ravioli with port wine and truffle, and a blood orange sorbet with kaffir lime. Standout a la carte dishes include shrimp gyoza with mango and crustacean foam, and veal filet with pumpkin, bimi, and Roscoff onion.
ESSperiment’s modern interior and relaxed vibe encourage lingering over the intricate plates. The team’s care extends to accommodating allergies and intolerances with advance notice, though the restaurant currently does not offer vegan cuisine, preferring to maintain its high standards within its concept.
