The story

Jan Diekjobst Restaurant – Modern Cuisine in Detmold | Michelin Recommended

A Return to Detmold

After a decade cooking in Hamburg, along the Mosel, and at Michelin-starred kitchens in Portugal and Germany, Jan Diekjobst came home. In Detmold’s historic Detmolder Hof, he opened his own restaurant, a place where a young team combines tradition with a fresh, creative approach to modern cuisine. The kitchen’s philosophy is simple: respect the product, work with the seasons, and let the ingredients speak.

The Open Kitchen

At the heart of the restaurant is the Chef’s Table – an open kitchen where guests watch every step of the preparation. There are no barriers, only a direct view of the pass and the cooks. The atmosphere is lively, the interaction immediate. Jan and his team see the first reactions as each plate arrives at the table, making the meal an experience that begins long before the first bite.

Seasonal Menus

The menu changes six times a year, always driven by what the region and the season offer. The winter menu, “Zwischen Kunst und Kälte,” is a study in contrasts: celeriac with truffle, hazelnut and apple; scallop with carrot, vanilla and mascarpone; zander with lamb’s lettuce, walnut and mushrooms; beef with polenta, paprika and crispy onions. Each dish is composed with precision – no decoration, only intention. A vegetarian version is also available, and wine or non-alcoholic pairings are offered alongside.

For a lighter option, the Gourmet Lunch (Thursday to Saturday) presents a two-course choice from a short, seasonal selection, with an optional dessert. The kitchen follows a nose-to-tail ethos, using every part of an ingredient and wasting nothing.

The Team

Jan works with a dedicated crew: Laurenz as sous chef, Lido as restaurant manager and sommelier, Falk as saucier, Jo as pâtissière, and others who each bring their own strengths. The service is warm and unhurried, and even four-legged guests are welcome with a blanket and a quiet spot by the table.

Michelin recognised the restaurant with a Recommended distinction, a nod to the consistent quality and clear vision that define Jan Diekjobst’s cooking. In Detmold, that vision is alive every evening.

Concept The restaurant of the traditional Hotel Detmolder Hof stands for fine dining. Menus feature three to seven courses. All courses can also be ordered à la carte. Cuisine Style For operator and head chef Jan Diekjobst, the respective season and the ingredients take center stage. In a relaxed atmosphere, artisanally prepared dishes are served, including dorade with kumquat, fennel, and crème fraîche. Lobster is served with potatoes and XO sauce. The main course comes from the region: local venison with porcini mushrooms, blackberries, and game spices. Not on the menu, but on the à la carte list, is the classic Wiener schnitzel with potato-cucumber salad. Wine The wine list offers a wide selection with 350 items. Particularly noteworthy is that 50 wines are available by the glass. Atmosphere The casual brasserie ambiance is characterized by high ceilings, wooden parquet flooring, and dark tables. Verdict Relaxed indulgence with refinement in a beautiful atmosphere.
