“Cooking resembles music. Melodies and dishes evoke emotions.” This belief, stated by chef Daniel C. Fischer, defines the experience at Porte Neuf in Detmold. His kitchen is built on four pillars: purism, pathos, craftsmanship, and esprit. The goal is not complexity for its own sake, but finding the right note and keeping the rhythm. This approach has earned Porte Neuf a Michelin Recommended distinction for 2026, a recognition of its refined modern French cuisine.
Fischer’s path to his own restaurant passed through some of Germany’s and Europe’s most respected kitchens. He trained at Franz Keller Schwarzer Adler in Oberbergen (one Michelin star), cooked at Colombi Hotel in Freiburg (one star), and worked at Bijou Restaurant in Dublin. He then spent time at Restaurant Konstantin Filippou in Vienna (two stars) and Restaurant Flurin in Glurns. These experiences shaped a style that is both precise and personal.
Porte Neuf offers two main tasting menus. The Nexus Menu (€140) is described as “an abstract study of convergence.” It moves through a sequence of small courses: Charolais beef with imperial caviar and bone marrow, pine with salsify and yuzukosho, langoustine with gochujang and kinako, agnolotti with shiitake and Belper Knolle, Iberico pork with balsamic and beluga lentils, and a dessert of kimchi, ivoire chocolate, and umeboshi. A shorter Nexus Menu – Essence (€105) distills the same idea into five courses. Both can be paired with a wine journey or non-alcoholic accompaniment.
For those seeking a deeper exploration, the P9 Signature Menu (€210) is available exclusively by pre-order. The restaurant’s modern cuisine also shows respect for vegetable-forward ingredients, with dishes like the pine and salsify course or the agnolotti standing out as vegetarian-friendly.
