The story
In the heart of Dinkelsbühl’s medieval old town, the restaurant at the Hotel Deutsches Haus occupies a space that once held a bank. Now called Ehemalige Sparkasse, it opened in spring 2024 after a loving restoration that preserved the building’s history while introducing sleek, contemporary design. The result is a dining room that feels both grounded and light—modern-purist in its lines, yet warm with the character of aged stone and tall windows.
The kitchen focuses on seasonal cuisine that draws directly from the region. Dishes are built around fresh produce from trusted local producers, reflecting a philosophy of quality and proximity rather than novelty for its own sake. The menu changes with what is available, offering a modern interpretation of Franconian classics. You might find a Fränkischer Zwiebelrostbraten with house-made Schupfnudeln, or a delicate Zander filet with Tagliatelle and Beurre Blanc. For those who prefer lighter options, there are vegetarian main courses such as an open vegetable lasagne with Tofu Bolognese or Roman-style gnocchi with barley and mushroom ragout.
This commitment to honest, well-executed cooking at reasonable prices earned the restaurant a Bib Gourmand from Michelin—a distinction that matches the restaurant’s character: unpretentious, generous, and genuinely satisfying. The same careful sourcing shows in the wine list and in details like the house-made Limone Basilikum cocktail or the alcohol-free STILLWERK Spritz.
Ehemalige Sparkasse serves a full menu from lunch through evening, with a newly introduced lunch card offered daily from 11:30 to 17:30. The atmosphere is refined but relaxed: exposed concrete and warm wood, soft lighting, and tables spaced for conversation. It is a restaurant for people who value substance over flourish—where the cooking speaks for itself, and the setting lets you enjoy it without distraction.
