The menu changes with the seasons, but certain signatures define the place. The Beef Tatar “Grande Étoile” – marinated with piquillo peppers, capers, mustard, and a sous-vide egg yolk, served in a kataifi nest – shows a playful hand. Enten Consommé, a clear duck broth with glazed vegetables and duck wonton, is both elegant and deeply comforting. Main courses range from pink-grilled duck breast with orange jus and almond-broccoli to a delicate Loup de Mer fillet with beetroot risotto, roasted beets, cassis gel, and pine nuts. The Ricotta Ravioli with truffle, dressed in lemon-thyme butter and finished with grated Grana Padano, is a quiet triumph.
