The heart of the experience is “The Table Journey” – Lenz Leslie’s Sharing Table, available from two guests. It’s an 18-moment tasting sequence that moves from Gaues bread with spiced dip through delicate starters like salmon tartare with ponzu nut butter and avocado, to a crisp pork belly with teriyaki, pointed cabbage, and mango, and finally to a rosy beef rump steak with spinach, truffle, and mashed potato. Desserts include a playful Ü-Ei ice cream and classic Kaiserschmarrn. At 54 euros per person, it’s a generous arc of the kitchen’s strengths.

A la carte, the menu highlights seasonal specialties. In winter, the Norwegian Skrei takes center stage – a migratory cod that arrives after five years in the Barents Sea. LENZ offers it poached with spinach, parmesan, and truffle, or pan-fried with herb butter and sugar snaps. The Vierländer Ente, carved tableside for two, comes with consommé, red cabbage, potato dumplings, and apple compote – a proper northern German feast.

The kitchen also nods to local tradition with Duvenstedter Labskaus, a classic sailor’s dish served with rollmops and fried egg. For those who prefer grazing, starters range from beef tartare “in the bone” to arancini with salsiccia, and a cheese plate features Tête de Moine AOP RESERVE with potato rosti.
