The story
Mountain Hub Gourmet sits directly beside the central area of Munich Airport, inside the Hilton Munich Airport. It is a place apart: a Michelin-starred restaurant that feels more like a serene mountain retreat than a transit hub. The restaurant describes itself as “pure essence of fine star cuisine,” and the setting—clean, bright, with alpine touches—matches that ambition.
Head Chef Marcel Tauschek leads the kitchen. The restaurant’s own words call him a “raw diamond of the new chef generation,” and his cooking is described as “unadulterated and authentic, yet with a special finesse.” Elegance meets a young, fresh signature. Tauschek has been with Mountain Hub since its opening in 2020, first as sous chef, and now at the helm of a kitchen that earned a Michelin star in 2024 and the World Luxury Restaurant Award in the same year.
The dining experience is built around choice. Guests can select from four, five, or six courses, each a sequence of precisely composed dishes. Sample dishes from the current menu include red beet with thyme, croquette with bacon and onion, radicchio with goat cheese and cassis, and char with radish and lemon. The kitchen also offers a dedicated vegetarian menu—six courses without meat or fish, but with the same level of refinement. A business lunch (three courses) is available Thursday and Friday, and a Young Star Special (four courses for €95) is open to guests under 30.
Ingredients lean local: the restaurant buys from nearby bakers, butchers, and farmers. The cuisine is Modern Cuisine, inspired by the Alps but executed with a clarity that avoids cliché.
The Michelin star is not just a decoration here. It is woven into the identity of Mountain Hub Gourmet—the only one-star restaurant at Munich Airport, a fact the restaurant wears with quiet pride. The award speaks to the precision and character that defines every plate, from the amuse to the final petit four. For anyone with a layover or a local craving, it is a rare chance to experience starred cooking without leaving the terminal.
