In Friedrichshafen-Fischbach, directly on Lake Constance, Die Speiserei im Maier offers a dining experience rooted in tradition yet forward-looking. The restaurant is part of the Hotel Maier and has earned a Michelin Recommended distinction for its commitment to quality and sustainability.

Chef Philipp Heid

Since March 2023, chef Philipp Heid has led the kitchen. He previously earned a Michelin star at Restaurant PRISMA in Vitznau, Switzerland, and worked under acclaimed chefs Dirk Hoberg and Christian Bau. At Die Speiserei, he brings a modern, relaxed style that prioritises lightness without over‑dressing. His cooking draws from the Bodensee region and extends into the Alpine cultural space, with a focus on artisanal, protected products—following the Slow Food “Arche of Taste” principle: “Eat what you want to save.”

A Philosophy of Sustainability

The restaurant calls its concept “Nachhaltigkeits-Crossover” (sustainability crossover). Ingredients come from local, certified organic producers and are listed by name on the menu. This classic cuisine is reinterpreted with seasonal, regional ingredients—whether it’s cold‑smoked char, milk‑fed veal roulade, or Lindau kid goat. The kitchen also offers vegetarian options and special holiday menus, such as the Easter or Lenten offerings.

Atmosphere and Dining

The dining rooms and parlours (“Stuben”) carry stories of past decades, blending tradition with a fresh spirit. In warmer months, guests can sit on the terrace. The “Wohnzimmer” lounge invites lingering over a glass of wine. The wine list is a journey around the lake, featuring bottles from Germany, Austria, Switzerland, and Liechtenstein, many spontaneously fermented and individual in character.

The lunch menu (Monday to Friday, 12:00–14:00) includes a soup or salad and mineral water. Dinner service runs until 21:30. The Michelin Recommended award reflects the consistent quality and the team’s dedication to honest, flavour‑driven cooking. Die Speiserei im Maier is a place where classic cuisine meets a clear sense of place—and where every meal feels both grounded and surprising.
