An Italian Institution, Five Decades in the Making

When Alfredo Carturan, a native of Padua, opened his restaurant on Tunisstrasse next to the Cologne Opera in 1973, he was doing something genuinely rare: offering Italian cuisine that went well beyond the familiar standards of the era. Within a short time, guests were arriving from around the world to experience his cooking in what the restaurant describes as a light-filled, elegant setting of just 40 covers. Food critics took notice early, and the intimate scale became part of the identity — discreet, refined, unhurried.

Roberto Carturan: Chef, Baritone, Custodian

The restaurant has been in the hands of Roberto Carturan, Alfredo's son, for the second generation. He has both preserved and expanded what his father built. The guiding principle, as Roberto puts it, is klassische Schlichtheit — classical simplicity at the highest level. His Italian kitchen draws on regional traditions from Piedmont to Sicily, and even the rustic farmhouse cooking of Tuscany serves as a point of departure for refinement and new combinations. Fish dishes remain a cornerstone of the menu.

Roberto's relationship with ingredients extends to the source: since 2000, the restaurant has imported its olive oils directly from Italy, a commitment that grew out of a long personal fascination with the subject.

He is also, unusually, a trained baritone. Every Friday evening, the restaurant hosts a musikalisch-kulinarische Soirée — a six-course dinner that culminates not with espresso but with Roberto singing Italian arias, accompanied by piano. Schumann and Carl Loewe have found their way into the programme alongside the Italian masters.

The Menu and the Cellar

The kitchen works with fresh, seasonal produce, and the menu changes frequently — sometimes daily. Current dishes reflect the breadth of Roberto's Italian cooking: langoustine with orange and fennel, paccheri with octopus, sole prepared in the Venetian style, and a rack of lamb that carries the house name. The approach is precise without being showy.

The wine cellar matches that ambition. Alongside bottles from celebrated Italian estates, Roberto has cultivated relationships with Italian winemaking families who emigrated to Chile, Argentina, and the United States — producers whose wines bring an unexpected dimension to the Italian food on the table. His son Giacomo, an oenologist, contributes by seeking out young and lesser-known producers in Germany, Austria, and beyond.

Recognition

Gambero Rosso, the authoritative Italian food and wine guide, awarded Ristorante Alfredo 2 forks in 2024 — a recognition that places it among the most accomplished Italian restaurants operating outside Italy. For a room of 40 seats in Cologne, that is a considerable distinction, and one the Carturan family has earned across two generations.
