The story
In the heart of Cologne, on Balduinstraße, Appare brings traditional Japanese cuisine to the table. The name itself is a Japanese exclamation of delight – the kind of spontaneous “Bravo!” or “Wonderful!” the restaurant hopes its guests will feel when they see and taste the food.
The kitchen is led by Chef Hiroyuki Watanabe, born in Tokyo in 1968. With over thirty years in gastronomy, his work is guided by a clear principle: “From the study of the old, create something new.” His goal is to develop a fresh style without denying the core of traditional Japanese cooking.
That tradition, known as Washoku, was declared an Intangible Cultural Heritage by UNESCO in 2013. Appare honours that legacy while looking forward. The result is a Japanese restaurant in Cologne that feels both rooted and contemporary – a place where precision and respect for ingredients meet quiet creativity.
Appare serves lunch from 12:00 to 15:00 (last orders at 14:00) and dinner from 18:00 to 22:00 (last orders at 21:00). The restaurant is closed on Wednesdays, Sundays, and public holidays.
