In Cologne’s Belgisches Viertel, Christoph Pauls Restaurant brings together refined technique and a deep respect for regional ingredients. The kitchen, led by chef Christoph Paul alongside his wife Juliane and long-time sous-chef Monika Rypalla, creates a new menu every week. It is this commitment to freshness and precision that earned the restaurant a Michelin Recommended distinction.
The menu changes weekly, shaped by what local farmers and artisans have at their peak. Christoph Paul sources beef, veal, and pork directly from the Eifel region, where animals are raised with space to roam. Vegetables and berries come from Werner Meller’s farm in Stommeln, just outside Cologne. The restaurant’s bread is baked in-house, using flour from the Blattert Mühle in Bonntorf. Blood and liver sausages are made following traditional recipes, and during the season, asparagus arrives freshly cut from Gut Sonnenberg. This farm-to-table approach is not a marketing phrase here—it is the daily reality of the kitchen.
Recent menus have included dishes such as smoked trout from the Bergisches Land in a cucumber emulsion, a creamy Bärlauch soup, and medallions of milk-fed veal on seasonal asparagus with sauce Mousseline. The cooking is French-rooted but distinctly local, with clear, layered flavours.
Christoph Paul trained at Michelin-starred restaurants including the two-star Zur Traube in Grevenbroich and Chez Alex in Cologne. His own restaurant has received high marks from Gault Millau and other guides. The dining room is stylish and welcoming, designed for guests to enjoy the evening at a relaxed pace.
