The story
Franz Gruber, a trained chef, restaurateur and hotel business economist, opened Gruber’s Restaurant in Cologne in 1999. The address on Clever Straße quickly became a culinary institution, blending Austrian hospitality with a serious commitment to quality. The kitchen is led by another Austrian, chef Denis Steindorfer from Carinthia, who balances traditional preparations with modern menus – including a surprise tasting menu that showcases the restaurant’s range. The result is an experience where Austrian cuisine meets modern cuisine in a setting that feels both welcoming and refined.
Service runs smoothly under the direction of Ornella Berrini, while the curated wine list is in the capable hands of sommelier Nico Veale. Austrian wines take center stage here, with classics from well-known estates and new discoveries worth exploring – a strength that earned the restaurant its place among those with an interesting wine list.
A recent example of the kitchen’s style is the Mittwochs-Menü, a four-course lunch offering that paired textures of celery with truffle, apple and hazelnut, followed by seared skrei with citrus and cauliflower, guinea fowl breast with Albufera sauce, Jerusalem artichoke and potatoes, and a dark chocolate dessert with vanilla and banana. The menu changes regularly, always reflecting a precise, ingredient-driven approach.
Gruber’s has been recognized by the Michelin guide with a Recommended status in 2026, a nod to its consistent cooking and warm atmosphere. Outdoor seating and vegetarian options make it a versatile choice for any occasion. For those who appreciate Austrian cuisine elevated with modern technique, this is a restaurant that delivers without pretence.
