Chef Kengo Nishimi’s Vision

At ITO in Cologne’s Belgian Quarter, chef Kengo Nishimi presents a take on Japanese cuisine that is both grounded in tradition and distinctly his own. He describes his style as a traditional Japanese kitchen, individually and modernly interpreted, completed by European influences. The result is a menu built on clear lines, giving each product, texture, and aroma room to unfold. Nishimi and his team focus on ingredients of the highest quality, letting technique and refinement create surprise within a purist framework.

Lunch and Dinner Offerings

The menu changes with the seasons, but a few signatures recur. At lunch, the ITO Tempura Lunch combines miso soup, ebi-vegetable tempura, hosomaki, and a nigiri variation. The ITO Special Lunch features black tiger prawns with a mikan-sesame-ponzu dressing, alongside a tuna roll and nigiri. A dedicated veggie lunch is also available, with king oyster mushroom, tofu cream, and a vegetable roll.

Dinner is built around an omakase experience: Kengo’s five-course menu journey (€109) begins with a small Japanese amuse, moves through soba noodles in dashi with gobo and Roscoff onion, then sashimi of scallop and hamachi with yuzu-cucumber broth. The main course offers a choice of sea bass with shio negi and kombu, or guinea fowl with red cabbage and peanut. A sixth course with fish can be added, and upgrades like Wagyu A5 or black cod are possible. Wine pairing is available for an additional charge.

Sake and Atmosphere

ITO’s sake list is a point of pride, earning the restaurant a “Notable Sake List” tag. The beverage program complements the food’s clean, layered flavors. The space also offers outdoor seating, making it a pleasant choice for warmer months.

The Michelin Guide has recognized ITO with a Recommended distinction, noting the precision and harmony in Nishimi’s cooking. It’s a restaurant where the chef’s personal interpretation of Japanese cuisine—both modern and respectful—finds a confident, satisfying expression in the heart of Cologne.
