The story
PULS (the logo is written “PVLS” in correct ancient Roman style) is the restaurant and bar inside the Legend Hotel in Cologne’s historic Altstadt. The name references a grain-based stew from Roman antiquity – the forerunner of polenta – and that historical thread runs through the menu in subtle ways.
Patron Daniel Gottschlich, a two-Michelin-star chef, and Chef de Cuisine Johannes Langenstück describe the food as “creative and puristically modern, but with that certain historical twist.” The duo previously earned their first Michelin star together at the restaurant Ox & Klee, and their partnership continues here. Langenstück, as Gottschlich’s right hand, oversees the entire gastronomic operation across restaurant, bar, and hotel.
The menu offers à la carte dishes, sharing plates, and high-quality bar snacks and drinks – all meant to be mixed and matched according to the guest’s mood. The kitchen’s contemporary international cuisine is matched by a bar program that emphasizes minimalist elegance and weekly food-pairing collaborations between bar and kitchen.
PULS has earned a Michelin Recommended distinction, a recognition that aligns with the quality expected from Gottschlich’s kitchens. The restaurant also received the “Best New Opening” award from the Kölner Stadtanzeiger in 2022, shortly after it opened.
Open Tuesday through Saturday from 17:30, the space offers counter dining and outdoor seating in one of Cologne’s most atmospheric quarters.
