Just a short drive from the UNESCO World Heritage Wadden Sea, Lindenhof 1887 sits in the small town of Lunden, Schleswig-Holstein. The building has stood here since 1887, housing a hotel and restaurant that define its own brand of country cooking: unfussy, modern, and deeply rooted in the region.

The Chef and His Philosophy

Küchenchef and host Tjark-Peter Maaß brings years of experience from kitchens like the Adlon in Berlin and the Hotel Vier Jahreszeiten in Hamburg back to his home turf. His focus is on the quality of regional products – from Dithmarschen’s fields and the North Sea. The result is a style of cooking that lets the ingredients speak, without unnecessary ornament. That commitment recently earned Lindenhof 1887 a Michelin Recommendation, a nod to the consistency and clarity of the kitchen.

What’s on the Plate

Seasonal menus change regularly, but the current selection gives a clear picture of the kitchen’s range. Starters include yellowtail with passion fruit and fennel, or Barbarie duck breast with chicory and fig. Soups like a creamy celeriac with Tönning shrimp or a wild game consommé with Hirsch nocken set the tone. Main courses range from braised beef shoulder with cranberries and Buchenpilze to filet of winter cod with vanilla and pointed cabbage. There are also classic North Sea dishes: fried plaice with bacon or Tönning shrimp, and a tender veal schnitzel. Vegetarians and vegans are well served – a Kohlrabi schnitzel or Venere risotto with green asparagus and shiitake show the kitchen’s versatility.

The Atmosphere

The restaurant mirrors the cooking: clean, comfortable, and welcoming. An outdoor terrace is available in warmer months, and a separate Clubraum seats up to 30 for private events. The dining room accommodates larger celebrations of up to 65 guests. Breakfast for non-hotel guests is served daily, with local honey and homemade jams, from 7:30 to 10:00.
