Head Chef Matthias Brenner leads the kitchen. A native of Augsburg, Brenner brings experience from prestigious fine-dining positions. His culinary philosophy is rooted in transforming his craft with a blend of classic, modern, and traditional elements into a distinctive Bavarian-Alpine cuisine, sourced from the finest sustainable ingredients. This approach has earned Brasserie Cuvilliés a Michelin Recommended distinction.

Local Producers and Artisanal Partners

The restaurant is part of Rosewood’s Partners in Provenance initiative, which prioritizes respect for local farmers and agriculture. Ingredients come from nearby suppliers: fish from Aumühle, meat from Tegyu and Tremmel, bread from Bäckerei Brantner, caviar from Kniewas-Austra, and organic eggs from Seepointherhof. This dedication to provenance ensures that every dish is rooted in the region’s best offerings.

Art and Intimacy

The dining room features a striking ceramic artwork by Munich-based artist Angelika Maria Stiegler, titled “Qu'ils mangent De La Brioche.” The piece weaves themes that invite both intimate table conversation and distant admiration. For private events, an exclusive Private Dining Room seats up to twelve guests, providing an intimate setting adjacent to the main restaurant.
