The story

Der Dantler – Country Cooking & Modern Cuisine in Munich | Michelin Recommended

Der Dantler

In the heart of Munich’s Au district, Der Dantler is a place where country cooking meets modern sensibility. The kitchen draws from the traditions of rural Germany, but plates them with a lightness and precision that feels entirely contemporary. The result is food that is both familiar and surprising—hearty without being heavy, refined without pretension.

The dining room mirrors this philosophy: warm wood, soft lighting, and an uncluttered space that puts the focus squarely on the table. There is no unnecessary decoration, just an atmosphere that invites you to settle in and take your time.

The menu changes with the seasons, built around the best produce the region has to offer. Dishes are rooted in technique but driven by flavor—clear, direct, and deeply satisfying. Whether it’s a slow-cooked meat dish or a vegetable that takes center stage, the cooking shows a deep respect for the ingredient itself.

Der Dantler’s recognition by the Michelin Guide as Recommended speaks to this consistency and care. It is not a restaurant that shouts for attention, but one that earns it through quiet, steady excellence. For anyone seeking honest, modern country cooking in Munich, this is a place worth knowing.

Concept Lunch à la carte featuring a pastrami sandwich, pasta, ramen, or the daily fish special, as well as a three-course lunch menu. In the evenings, exclusively five- to six-course tasting menus, available optionally vegetarian or pescatarian. Before or after: the cocktail and wine bar "Weinstube" next door. Cuisine Style Throughout the year, summer-light dishes are served, such as the "salade de la bavière urbaine", marinated tomatoes in a fruity-spiced basil broth with olive croquant. Crispy baked zucchini blossoms are stuffed with ricotta, while a summer squash tartare with preserved lemon adds freshness. A permanent menu staple is the pan-seared trout with almond butter and two kohlrabi preparations, while desserts lean heavily toward ice cream and frozen treats. Wine Around 100 predominantly white selections from Germany, Austria, and South Tyrol (with some reds). Stylistically more classic than experimental. Atmosphere Lively and bistronomic, without any pretentious barriers. Guests are quickly put on a first-name basis and can feel right at home as regulars. Conclusion A dining destination offering a charming blend of lightness and sophistication.
