In the heart of Munich’s Glockenbachviertel, Gasthaus Waltz opened its doors in early 2023 with a clear purpose: a place where everyone feels welcome. No fuss, no pretence – just a proper neighbourhood gasthaus that puts comfort and genuine hospitality first. The team, led by Markus Hirschler and Stefan Grabler, set out to create a space where you can sit, chat, and linger without hurry. The atmosphere is deliberately unhurried, the kind of warmth that makes you want to stay for another glass.

Honest Alpine Cooking

The kitchen follows a straightforward motto: “Alles geil, nichts lame” – everything great, nothing lame. That means Alpine cuisine rooted in simplicity and seasonality, drawing from Austrian and Bavarian traditions. The focus is on getting the best out of each product and each season. Dishes like Wiener Schnitzel with potato and lamb’s lettuce, or Kaspressknödel with pointed cabbage and chives, are executed with precision and respect for the ingredients. The midday three-course menu offers a changing snapshot of what’s best right now.

A Wine List That Commands Attention

Wine is central to the Gasthaus Waltz experience. The list runs to around 1,200 labels, with a strong focus on naturally produced wines from France, Germany, Austria, and beyond. Alongside classics in white, red, and sparkling, you’ll find aged bottles and lesser-known gems. The Spritzer – a wine spritzer – is served in the traditional glass, as it should be. For beer drinkers, Spaten-Bräu from Munich is the trusted partner.

Sourcing with Purpose

The team is transparent about where their ingredients come from. Meat from Schwäbisch-Hällisch pigs and cattle, fish from Penzing in Bavaria, vegetables from Resi am Markt at the Viktualienmarkt, bread from Julius Brantner in Munich, and cheese from a small farm in Carinthia. The list of suppliers reads like a map of regional excellence, with a strong emphasis on quality and traceability.

In 2026, Gasthaus Waltz was awarded a Michelin Bib Gourmand, a nod to its good-quality, good-value cooking. It’s a fitting recognition for a kitchen that never compromises on taste or provenance.
