The story

Restaurant Brückenbaron Ochsenfurt | Franconian Cuisine & Sustainable Dining

An Old Bridge Finds New Purpose

Restaurant Brückenbaron sits in Ochsenfurt, transforming a relocated steel bridge from the Main River into a culinary destination known for modern Franconian cuisine. Owner H. Metzger and chef A. Gläsel turned a simple industrial salvage project into an expanding hospitality site positioned within the local landscape. Guests gather in the covered lake area during summer months, then shift to the heated Plenum hall when temperatures drop. The grounds preserve traces of their original structure while offering dedicated rooms for celebrations and quiet meals.

Harvested Within Seventy Five Kilometres

The kitchen treats every ingredient as a measured component of regional cuisine. The property cultivates vegetables and herbs alongside a dozen fruit varieties, while free-range hens and a private fish pond supply additional proteins. This integrated system earned the establishment a GreenSpoon recognition from the Schlemmer Atlas, which praises its commitment to local sourcing and renewable power generation. Menu items reflect peak seasonal ripeness rather than rigid tradition, allowing the daily harvest to dictate the plate.

Curated Spaces for Intentional Dining

Evening service extends across several distinct rooms depending on the occasion and weather. The Baron.ess venue operates as a focused fine dining room where executive chef Gläsel applies ecological principles to refined preparations. Recognition from Michelin’s green guide arrived alongside a 1.5 ladle rating from the Schlemmer Atlas, validating a model that balances high standards with environmental responsibility. Patrons navigate between the intimate lounge, the open terrace, and the glass-enclosed pavilion without losing sight of the surrounding vineyards and waterways.

For the Brückenbaron restaurant, vegetables, herbs, and over a dozen varieties of fruit are grown on-site. The eggs come from their own chickens, the fish from their own breeding, and even the water is drawn from their own spring. All other products are sourced from within a 75-kilometer radius and are certified organic wherever possible. The establishment runs on green electricity, and the required heating energy is generated through a combined heat and power plant, ground-source and district heating, as well as its own 750-square-meter photovoltaic system. Additional details include an on-site lake with rainwater retention, internal sustainability training, support for the food bank, and a minimum of 30 days of vacation for all staff members.
