The story
Since 1996, chef and owner Elmar Simon has been the driving force behind Balthasar in Paderborn. Originally opened near the old synagogue, the restaurant moved to its current address on Warburger Straße in 2001 and was fully renovated in 2009. Simon’s kitchen has earned a Michelin star every year since 1998, a testament to the consistency and quality of his cooking.
The guiding principle at Balthasar is "lecker und schlotzig" — dishes that are delicious and melt on the tongue. Simon works with the best regional produce, composing seasonal tasting menus that balance diverse aromas into a harmonious whole. The result is Modern French cuisine that is excellent, surprising, and deeply satisfying.
