The dining space occupies a building designed by architect Karl Suter-Meister in 1898. During renovations in 2002, workers uncovered a heavily damaged stucco ceiling that had been hidden beneath layers of plaster and wood for roughly seven decades. Local heritage authorities placed the room under protection, allowing artisans to restore the original decorative motifs without altering the structural layout. Guests now eat beneath these restored surfaces in a comfortably sized room that retains its late nineteenth-century proportions.
The establishment takes its name from Salmenbräu, a regional brewery that operated in Rheinfelden between 1799 and 1973. Staff members display historical brewing artifacts throughout the main hall to honor that local tradition. Service follows a straightforward principle of attentive hospitality, with sommeliers offering selected wines through a professional Vinojet preservation system. Every dish moves through the pass with the same measured pace that defines the overall experience.
