Since its 2022 renovation, Fachwerk inside the Hotel Stadt Kassel has emerged as a destination for refined, seasonal cuisine in the heart of Rinteln. The space balances contemporary design with the building’s original timber-framed character, creating an atmosphere that feels both fresh and rooted.
Küchenchef Daniel Klein leads the kitchen with a philosophy focused on regional ingredients and precise craftsmanship. His cooking is described as fresh, focused, and ambitious – whether through a five-course degustation menu or a reimagined classic, the emphasis is on clear flavors and technical skill. The cuisine is seasonal, drawing from the surrounding region and changing with the calendar.
Julia and Moritz-Christian Brand are the hosts, and together with their team they foster a warm, genuine hospitality. Moritz-Christian also serves as sommelier, curating one of northern Germany’s most extensive and exciting wine lists – a treasure for connoisseurs and curious diners alike.
Fachwerk has earned a Michelin Recommended distinction, reflecting the kitchen’s ambition and consistency. In November 2024, the restaurant also joined the Jeunes Restaurateurs d’Europe (JRE), a network of young, independent gastronomes. The Brands see this membership as a natural next chapter, driven by a commitment to high standards and the exchange with like-minded peers.
The restaurant hosts regular WeinFachWerk evenings – intimate gatherings where winemakers, sommeliers, and guests share deep, unpretentious conversations around wine and food. For guests under 30, the JRE Twenü offer provides a three-course menu with wine pairings at an accessible price, making fine dining more approachable.
