The story

Odins Haithabu in Schleswig: A Regional Kitchen by the Schlei

A Strict Regional Standard

Odins Haithabu in Schleswig anchors its regional cuisine in producers located within a fifty kilometer radius. Oliver Firla built this historic gasthaus around a disciplined premise that excludes all convenience products and artificial flavor enhancers from the kitchen. The Schlemmer Atlas recognized this commitment when awarding the venue one and a half cooking spoons for consistently high local culinary standards and daily fresh baking. Ingredients move directly from nearby farms into the back-of-house operation managed by Piet Schröder.

House-Made Specialties

The menu translates that Nordic-German cooking into preservation techniques and wood-fired preparation. Diners order Sauerfleisch presented in glass jars alongside the distinctive Wikingerpizza and house-smoked ham cured in the on-site chamber. The bakery produces rye loaves, sweet buns, and fruit spreads using locally sourced grains. Seasonal vegetarian plates appear regularly to balance the robust charcuterie selection. Guests often wash down these earthy preparations with the establishment’s botanical gin or fermented craft mead.

Terrace Life and a Quiet Welcome

The dining room opens onto a wind-protected terrace positioned directly beside the Schlei fjord. Visitors walk straight from the Viking Museum or the ancient Danevirke wall to claim a table among seasoned regulars. Service remains deliberately unhurried, accommodating solo guests and small family parties without rigid booking requirements. Water bowls sit ready for visiting dogs while staff handle card payments and weekend rushes with practiced efficiency. The entire setup favors steady routines over staged performances.
