The story

bistronauten Weinheim – Michelin Recommended Regional & Seasonal Dining

A Philosophy of Simplicity and Seasonality

In Weinheim, bistronauten follows a straightforward creed: regional, seasonal, and honest. The kitchen works with what grows nearby, sourced from small local producers. There is no fuss, no unnecessary frills – “ganz ohne Chichi,” as they say. The open kitchen connects cook, dish, and guest in a rare, direct way.

What’s on the Plate

Each evening, bistronauten offers a short, deliberate menu: a soup, a salad, three main courses – one meat, one fish, one vegetarian – plus a dessert and cheese. The preparation adapts to the season: slow-braised dishes in winter, lighter fare in summer. Everything is made from scratch. A recent menu included a carrot soup with coriander and sesame, followed by a bistro salad. Mains ranged from wild boar goulash with braised cabbage and Schupfnudeln to pike-perch with spinach and mustard sauce, or beetroot dumplings with horseradish, Alb lentils, and apple. Dessert brought plum with brioche and coffee, or raw milk cheese with chutney and fruit bread – all for a set price of €65 including water.

Atmosphere and Service

The service style is relaxed, not staged: jeans instead of suits, unhurried even during busy service. Wine comes from winemakers the team personally visits and selects. It’s a welcoming, unpretentious space that lets the food speak.

The Michelin inspectors have taken note, awarding bistronauten a Recommendation for its clear, season-driven cooking. For anyone seeking genuine regional cuisine in the Weinheim area, this is a place that delivers exactly what it promises.
