The story
For nearly four decades, Ente-Bistro has been a culinary institution in Wiesbaden, earning a Michelin star and two Gault&Millau toques. Located at the Nassauer Hof hotel, the restaurant offers a refined yet welcoming atmosphere for exploring world-class cuisine.
Chef Michael Kammermeier, a fixture in German gourmet dining for almost twenty years, leads the kitchen. He describes his philosophy as “Inspired by the world's flavour – apart from Antarctica.” This playful approach draws on seasonal “flight routes” to distant lands, bringing unexpected aromas and combinations to the plate. Kammermeier’s style fuses classic French culinary art with modern influences, always emphasizing high-quality, regional produce and precise craftsmanship.
The menu showcases this creative world tour. Guests can choose from tasting menus or à la carte dishes, such as Scottish scallops with corn crème brûlée, green asparagus, and coconut jelly. Beloved classics like crispy duck are also available. A dedicated team of sommeliers selects wines—described as “wine personalities”—to complement each course.
The dining room is sophisticated yet comfortable, with outdoor seating available. The restaurant’s seasonal, classic French cuisine is presented with a lightness that keeps diners returning. Ente-Bistro also features an air-conditioned space, is wheelchair accessible, and offers a notable wine list.
Note that the restaurant is temporarily relocating to Kloster Eberbach starting March 2026 during the Nassauer Hof’s comprehensive renovation.
