The story
Molitors Mühle sits in the quiet Salmtal near Wittlich, where the kitchen focuses on German-Mediterranean cooking rooted in local ingredients. Johann von Minden acquired the original foundry site in 1701, and the property later transformed into a working mill when Nikolaus Molitor purchased the abandoned rolling mill in July 1870. His brother Matthias handled the heavy locksmith work while Nikolaus managed the carpentry, allowing the new grain mill to open just months later. This family-run establishment still stands at the edge of a tranquil pond, preserving the industrial bones beneath a modern hospitality layer.
The culinary program centers on a rotating four-course evening menu that changes every single day. Chefs draw heavily from regional organic produce alongside fish and wild game harvested from their own private larder. Guests typically choose between meat, seafood, or plant-based options within the same structured framework. The kitchen prepares these dishes with a regional cooking philosophy that prioritizes seasonal rhythm over permanent staples.
Rooms feature boxspring beds, wood-burning stoves, and large windows facing the surrounding valley.
