The story
NEFELEJCS Borbisztró Badacsony sits quietly on the main street of Tapolca, delivering a refined Hungarian bistro experience that honors local harvests. The operation traces back to the SKIZO label, a project born from a desire for unfiltered expression. Over a decade, that vision matured into Sike Balázs Pincéje, shifting focus toward the direct connection between vineyard soil and glass. The Hungarian kitchen applies this same clarity to regional ingredients, avoiding heavy sauces so clean flavors can take center stage.
The dining card stays intentionally compact so the cooks can maintain strict quality control. Grey cattle from Nemesgulács form the base of a deeply savory spring soup, which gains unexpected texture from bulgur balls stuffed with mature cheese. Grilled pike perch arrives alongside roasted Romanesco broccoli and a smooth caramelized cauliflower cream. A bone in breaded mangalica chop completes the rotation, resting atop aged cheese mashed potatoes beside a bright cucumber tomato relish. Every plate reflects a commitment to straightforward regional cuisine.
The whitewashed building carries the visual weight of its history without feeling stiff or overly formal. Blue painted window frames break up the bright exterior, while inside, rustic wooden beams cross above sturdy oak tables. Modern gallery prints hang beside simple vases of seasonal blooms, creating a balance between countryside tradition and contemporary comfort. Staff explain wine pairings without pretension, letting the room breathe.
