The story
Aniar is a Michelin-starred restaurant in Galway’s West End, where the menu is a direct expression of the landscape that surrounds it. Chef Patron Jp McMahon leads a kitchen that looks to the farms, wildlands, and shores of the west of Ireland for inspiration. The result is a tasting menu that changes with the seasons, reflecting the natural course of the year.
Jp McMahon’s approach is rooted in understanding the past. He champions old traditional cooking and preservation methods – curing, pickling, smoking, and fermenting – alongside wild and foraged local ingredients. The aim is to uncover the untapped resources of Irish food by first understanding its culinary heritage. The tasting menu is described as an immersive dining experience, taking Irish food through the ages with a contemporary filter.
Beyond the dining room, Aniar is home to a boutique cookery school where Jp McMahon leads one-day workshops and private classes.
